Ingredients

  • For the Raspberry Syrup:
  • 1 cup frozen raspberries
  • ¼ cup granulated sugar
  • For the Cookies:
  • 2 cups gluten-free flour
  • 1.5 tablespoons cornstarch
  • 1.5 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter or vegan baking stick, room temperature
  • 1 ¼ cups plus 2 tablespoons granulated sugar
  • 2 heaping tablespoons cornstarch mixed with 3 tablespoons water
  • 3 tablespoons milk
  • 3 tablespoons raspberry syrup
  • 3 drops red food coloring
  • ½ cup frozen raspberries, chopped

Instructions

  1. Prepare the raspberry syrup by combining frozen raspberries and sugar in a saucepan over medium heat. Cook until the raspberries break down and the mixture thickens, then strain and set aside.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a bowl, mix gluten-free flour, cornstarch, baking powder, and salt.
  4. In another bowl, cream butter and sugar until smooth.
  5. Add cornstarch mixture with water, milk, raspberry syrup, and food coloring to the butter and sugar mixture. Mix well.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in chopped frozen raspberries.
  8. Drop spoonfuls of dough onto the prepared baking sheet, rolling them in the reserved sugar.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Store cookies in an airtight container.
  • Use fresh raspberries if available for a different texture.
  • Adjust food coloring to achieve desired color.
