Description

Delicious and chewy peanut butter bars topped with chocolate frosting.


Ingredients

  • 1 cup salted butter softened (227g)
  • 1 cup granulated sugar (200g)
  • 1 cup packed light brown sugar (200g)
  • 2 1/2 cups creamy peanut butter divided
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour scooped & leveled (282g)
  • 2 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup salted butter softened (114g)
  • 3 cups powdered sugar
  • 4 Tablespoons cocoa powder
  • 1/4 cup milk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar.
  3. Add peanut butter, eggs, and vanilla extract. Mix until smooth.
  4. In another bowl, combine flour, oats, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture. Mix until fully combined.
  6. Spread the mixture into a greased baking pan.
  7. Bake for 25-30 minutes or until golden brown.
  8. While the bars cool, prepare the frosting by creaming together softened butter, powdered sugar, cocoa powder, milk, and vanilla extract.
  9. Spread frosting over cooled bars.
  10. Cut into squares and serve.
