Delicious and chewy peanut butter bars topped with chocolate frosting.

- 1 cup salted butter softened (227g)
- 1 cup granulated sugar (200g)
- 1 cup packed light brown sugar (200g)
- 2 1/2 cups creamy peanut butter divided
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour scooped & leveled (282g)
- 2 cups old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup salted butter softened (114g)
- 3 cups powdered sugar
- 4 Tablespoons cocoa powder
- 1/4 cup milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar.
- Add peanut butter, eggs, and vanilla extract. Mix until smooth.
- In another bowl, combine flour, oats, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture. Mix until fully combined.
- Spread the mixture into a greased baking pan.
- Bake for 25-30 minutes or until golden brown.
- While the bars cool, prepare the frosting by creaming together softened butter, powdered sugar, cocoa powder, milk, and vanilla extract.
- Spread frosting over cooled bars.
- Cut into squares and serve.
Notes
- Store bars in an airtight container.
- Bars can be frozen for up to 3 months.
- Adjust sweetness of frosting to taste.
