  • 1 tablespoon lemon zest (from about 2 lemons)
  • 2 tablespoons fresh lemon juice

Instructions

  2. Grease and flour a loaf pan.
  3. In a bowl, mix flour, sugar, baking soda, salt, and poppy seeds.
  4. In another bowl, whisk melted butter, eggs, buttermilk, lemon zest, and lemon juice.
  5. Combine wet and dry ingredients until just mixed.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack.
