Ingredients
- Ground Turkey (1 lb, 93% lean)
- Olive Oil (1 tbsp)
- Sweet Potatoes (2 large, cubed)
- Bell Peppers (2 medium, diced)
- Onion (1 medium, diced)
- Spinach (2 cups, packed)
- Mozzarella Cheese (1 ½ cups, shredded)
- Chili Powder (1 tsp)
- Cumin (1 tsp)
- Garlic Powder (1 tsp)
- Paprika (½ tsp)
- Chicken Broth (¼ cup)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook until browned.
- Add onion and bell peppers. Sauté until softened.
- Stir in sweet potatoes, spinach, and spices. Mix well.
- Pour chicken broth over the mixture and stir.
- Transfer to a baking dish and top with mozzarella cheese.
- Bake for 30-35 minutes, until sweet potatoes are tender.
