Ingredients

- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in ground beef, cook until browned.
- Add sliced zucchini and cook until tender.
- Add diced tomatoes, Italian seasoning, salt, and pepper. Stir well.
- Sprinkle cheddar cheese on top. Cover and let cheese melt.
- Garnish with fresh parsley and serve.

- Feel free to add other vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
