  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in ground beef, cook until browned.
  4. Add sliced zucchini and cook until tender.
  5. Add diced tomatoes, Italian seasoning, salt, and pepper. Stir well.
  6. Sprinkle cheddar cheese on top. Cover and let cheese melt.
