Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese (plus extra for topping)

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet.
  4. In the same skillet, melt butter over medium heat.
  5. Add minced garlic and crushed red pepper flakes, sauté for 1-2 minutes.
  6. Stir in Dijon mustard, lemon juice, and zest. Mix well.
  7. Add cooked chicken back to the skillet and toss to coat.
  8. Cook pasta according to package instructions. In the last 2 minutes, add broccoli florets.
  9. Reserve 1/2 cup pasta water, then drain pasta and broccoli.
  10. Add pasta, broccoli, and reserved pasta water to the skillet. Toss to combine.
  11. Stir in Parmesan cheese and adjust seasoning.
  12. Serve hot, garnished with extra Parmesan cheese.
