Description

Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice white or brown
  • 1 ripe avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • 1 tbsp water
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add shrimp, chili powder, cumin, garlic powder, salt, and pepper.
  3. Cook shrimp for 3-4 minutes until pink and cooked through.
  4. In a bowl, combine cooked rice, avocado, cherry tomatoes, red onion, and cilantro.
  5. In another bowl, mix sour cream, cilantro, lime juice, water, salt, and black pepper to make the sauce.
  6. Serve the shrimp over the rice mixture and drizzle with the cilantro lime sauce.
