Ingredients

- 1 pound lean ground beef
- 1 packet taco seasoning
- 5 burrito-sized tortillas
- 1 1/2 cups cooked rice (Spanish Rice, Cilantro-Lime Rice, or just white rice)
- 1 (15 ounce) can refried beans
- 2 cups shredded cheddar cheese, divided
- 1 tablespoon unsalted butter
- 2 tablespoons all-purpose flour
- 1/2 cup beef broth (low sodium)
- 28 ounce can enchilada sauce
- 1 teaspoon chili powder
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning and follow package instructions.
- Warm the refried beans in a separate pot.
- Lay out tortillas and spread a layer of rice, beans, and seasoned beef on each.
- Roll the tortillas tightly and place them in a baking dish.
- In a saucepan, melt butter, add flour, and stir for a minute.
- Gradually whisk in beef broth and enchilada sauce, then add chili powder.
- Pour the sauce over the rolled burritos in the baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
Notes
- Feel free to customize with your favorite toppings.
- Can substitute ground turkey or chicken for beef.
- Make it spicier by adding jalapeños.
