Ingredients

  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic and chopped bell pepper; cook for a few minutes.
  4. Add lentils, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until lentils are tender.
  6. Garnish with fresh cilantro before serving.
