This Vegan Sticky Sesame Chickpeas recipe is a delicious and easy dish packed with flavor.
Ingredients

- 2 15 ounce cans chickpeas
- 3–4 large cloves garlic
- 1 tablespoon avocado oil or olive oil
- 1.5 tablespoons toasted sesame oil
- ⅓ cup low sodium tamari or soy sauce
- 3 tablespoons maple syrup
- 2 teaspoons rice vinegar
- ½ teaspoon ground ginger
- 1 tablespoon tapioca starch
- ¼ cup low sodium vegetable broth or water divided
- ½ teaspoon red pepper flakes optional for spice
Instructions
- Drain and rinse the chickpeas.
- Mince the garlic.
- Heat avocado oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add chickpeas and cook for a few minutes.
- In a bowl, mix tamari, maple syrup, rice vinegar, ground ginger, and red pepper flakes.
- Pour the sauce over the chickpeas.
- In another bowl, mix tapioca starch with ¼ cup vegetable broth or water.
- Add the starch mixture to the chickpeas and stir well.
- Cook until the sauce thickens, about 5 minutes.
Notes
- Adjust red pepper flakes for spice preference.
- Serve over rice or quinoa.
- Store leftovers in the fridge for up to 3 days.
