Ingredients

  • 2 15 ounce cans chickpeas
  • 34 large cloves garlic
  • 1 tablespoon avocado oil or olive oil
  • 1.5 tablespoons toasted sesame oil
  • ⅓ cup low sodium tamari or soy sauce
  • 3 tablespoons maple syrup
  • 2 teaspoons rice vinegar
  • ½ teaspoon ground ginger
  • 1 tablespoon tapioca starch
  • ¼ cup low sodium vegetable broth or water divided
  • ½ teaspoon red pepper flakes optional for spice

Instructions

  1. Drain and rinse the chickpeas.
  2. Mince the garlic.
  3. Heat avocado oil in a pan over medium heat.
  4. Add garlic and sauté until fragrant.
  5. Add chickpeas and cook for a few minutes.
  6. In a bowl, mix tamari, maple syrup, rice vinegar, ground ginger, and red pepper flakes.
  7. Pour the sauce over the chickpeas.
  8. In another bowl, mix tapioca starch with ¼ cup vegetable broth or water.
  9. Add the starch mixture to the chickpeas and stir well.
  10. Cook until the sauce thickens, about 5 minutes.
