- 1 package 3.4 oz Vanilla instant pudding dry mix
- 1 can 15 oz pumpkin puree
- 1 ¾ cup flour
- 1 tablespoon baking powder
- 1 tablespoon pumpkin spice
- 1 teaspoon baking soda
- ⅓ cup oil
- 2 eggs
- 1 cup sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree and vanilla pudding mix.
- Add the oil and eggs, and mix until combined.
- In another bowl, combine the flour, baking powder, pumpkin spice, and baking soda.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
