Ingredients

  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 50ml single cream
  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Heat olive oil and butter in a pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in sweet potato, garlic, and cinnamon; cook for a few minutes.
  4. Add chopped tomatoes, chicken stock, and sugar; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Blend the soup until smooth and stir in cream.
  7. For the dumplings, mix breadcrumbs, baking powder, cheddar, mustard powder, and oregano in a bowl.
  8. Beat the egg and mix with cream cheese; add to the breadcrumb mixture.
  9. Form dumplings and drop them into the simmering soup.
  10. Cover and cook for 15 minutes until dumplings are cooked through.

  • Use vegetable stock for a vegetarian version.
  • Store leftovers in the refrigerator for up to three days.
