- For the Cheesecake Filling
- 8 oz (225 g) cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- For the Cookie Dough
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- For the Strawberry Topping
- 1 1/2 cups fresh strawberries, finely chopped (or frozen, thawed and drained)
- 2 tbsp granulated sugar
- 1 tsp cornstarch (optional, to thicken)
- For Garnish
- Extra sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cream cheese, powdered sugar, and vanilla for the cheesecake filling.
- In another bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add eggs and vanilla to the butter mixture and mix well.
- In a separate bowl, combine flour, baking soda, baking powder, and salt.
- Gradually mix dry ingredients into the wet mixture until combined.
- Chill the cookie dough for 30 minutes.
- Roll dough into balls and place on a baking sheet.
- Make a well in each ball and fill with cheesecake mixture.
- Top with chopped strawberries mixed with sugar and cornstarch.
- Bake for 12-15 minutes until edges are golden.
- Sprinkle with extra sugar before serving.
