Ingredients
- Salmon Fillets – 1 lb, cut into bite-sized cubes
- Sriracha Sauce – 2 tbsp, adjust to taste
- Honey – 2 tbsp
- Soy Sauce – 2 tbsp, low-sodium if preferred
- Garlic – 3 cloves, minced
- Lime Juice – 2 tbsp
- Sesame Oil – 1 tbsp
- Cooked Rice – 2 cups, jasmine or sushi rice
- Roasted Cauliflower – 2 cups, lightly charred
- Green Onions – 1/4 cup, chopped
- Cilantro – 1/4 cup, chopped
- Sesame Seeds – 1 tbsp
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix Sriracha, honey, soy sauce, garlic, lime juice, and sesame oil.
- Add salmon to the marinade and let it sit for 15 minutes.
- Spread the cauliflower on a baking sheet and drizzle with olive oil, then roast for 20 minutes.
- Cook the marinated salmon in a skillet over medium heat until cooked through, about 5-7 minutes.
- Prepare bowls with cooked rice as the base.
- Top rice with salmon, roasted cauliflower, and garnish with green onions, cilantro, and sesame seeds.
