Ingredients

  • Salmon Fillets – 1 lb, cut into bite-sized cubes
  • Sriracha Sauce – 2 tbsp, adjust to taste
  • Honey – 2 tbsp
  • Soy Sauce – 2 tbsp, low-sodium if preferred
  • Garlic – 3 cloves, minced
  • Lime Juice – 2 tbsp
  • Sesame Oil – 1 tbsp
  • Cooked Rice – 2 cups, jasmine or sushi rice
  • Roasted Cauliflower – 2 cups, lightly charred
  • Green Onions – 1/4 cup, chopped
  • Cilantro – 1/4 cup, chopped
  • Sesame Seeds – 1 tbsp

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix Sriracha, honey, soy sauce, garlic, lime juice, and sesame oil.
  3. Add salmon to the marinade and let it sit for 15 minutes.
  4. Spread the cauliflower on a baking sheet and drizzle with olive oil, then roast for 20 minutes.
  5. Cook the marinated salmon in a skillet over medium heat until cooked through, about 5-7 minutes.
  6. Prepare bowls with cooked rice as the base.
  7. Top rice with salmon, roasted cauliflower, and garnish with green onions, cilantro, and sesame seeds.
