- 1 lb ground beef (lean preferred)
- 1 lb red potatoes, diced
- 1–2 cups shredded cheddar or Colby Jack cheese
- 1 cup chopped lettuce or mixed greens
- 1 small onion, diced
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ cup mayonnaise (for sauce)
- ¼ cup ketchup (for sauce)
- 1 tablespoon yellow or Dijon mustard (for sauce)
- ½ teaspoon Cajun seasoning (for sauce, adjust to taste)
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
- In a skillet, cook ground beef over medium-high heat until browned, breaking it into pieces.
- Add diced onion to the skillet and cook until translucent.
- Prepare the special sauce by mixing mayonnaise, ketchup, mustard, and Cajun seasoning in a bowl.
- Assemble the bowls with roasted potatoes, cooked beef, shredded cheese, and lettuce.
- Drizzle with special sauce before serving.
