Description

A hearty and flavorful slow cooker dish combining taco flavors with pasta.


Ingredients

  • 1 lb ground beef or turkey
  • 1 (16 oz) jar of salsa
  • 1 (10 oz) can of diced tomatoes with green chilies
  • 1 packet (1 oz) taco seasoning
  • 2 cups uncooked pasta (elbow macaroni or small shells)
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth or water
  • Optional: chopped onions, bell peppers, black beans, corn

Instructions

  1. Brown the ground beef or turkey in a skillet.
  2. Drain excess fat.
  3. Add browned meat to the slow cooker.
  4. Stir in salsa, diced tomatoes, taco seasoning, and beef broth or water.
  5. Add uncooked pasta and mix well.
  6. Cover and cook on low for 4-6 hours or until pasta is tender.
  7. Stir in shredded cheddar cheese before serving.

Notes

  • Adjust spice level by adding more or less taco seasoning.
  • For a vegetarian option, substitute meat with black beans.
  • Serve with sour cream or avocado if desired.
