Ingredients

- 1 cup low-moisture mozzarella shredded
- Juice from one lemon approximately 2 tablespoons
- 1/4 teaspoon crushed red chili flakes optional
- 4 tablespoons unsalted butter separated into two portions
- 1/2 teaspoon freshly ground black pepper or to taste
- 1 pound large shrimp shells removed and deveined
- 1 teaspoon finely grated lemon zest
- 12 ounces of dried spaghetti or linguine noodles
- 1/2 cup dry white wine or low-sodium chicken broth
- 3 tablespoons extra virgin olive oil
- 5 cloves fresh garlic finely minced
- 1/4 cup Italian flat-leaf parsley chopped
- 1/2 cup finely grated Parmesan cheese
- Kosher salt to taste
Instructions
- Cook spaghetti or linguine according to package instructions until al dente.
- In a large skillet, heat 2 tablespoons of butter and olive oil over medium heat.
- Add garlic and red chili flakes, sauté for 1-2 minutes until fragrant.
- Add shrimp and season with salt and pepper. Cook until shrimp turn pink.
- Pour in white wine or chicken broth and lemon juice. Simmer for 3-4 minutes.
- Stir in lemon zest, remaining butter, and mozzarella. Mix well.
- Add cooked pasta and parsley, tossing to combine.
- Sprinkle with Parmesan cheese before serving.
Notes
- Adjust seasoning to taste.
- For a spicier dish, increase crushed red chili flakes.
- Use fresh shrimp for best flavor.
