  • 8 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream (for dipping)

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add bell pepper and onion; sauté until softened.
  3. Stir in chopped shrimp, crab meat, and fajita seasoning; cook until heated through.
  4. Remove from heat and let cool slightly.
  5. Lay out a tortilla and place a portion of the filling in the center.
  6. Sprinkle with Monterey Jack cheese.
  7. Roll up the tortilla tightly around the filling.
  8. Repeat with remaining tortillas and filling.
  9. Serve with sour cream and garnish with cilantro.
