Ingredients

- 1 1/2 pounds boneless skinless chicken breast, cubed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup unsalted cashews
- 2 tablespoons olive oil
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, soy sauce, honey, rice vinegar, garlic, ginger, cornstarch, and water.
- Add the cubed chicken and vegetables to the bowl. Toss to coat.
- Spread the mixture evenly on a sheet pan.
- Bake for 25-30 minutes, stirring halfway through, until chicken is cooked through.
- Sprinkle cashews on top and bake for an additional 5 minutes.
- Serve warm.
