Description

A refreshing pasta salad with salami and mozzarella.


Ingredients

  • 12 oz tortellini fresh or frozen
  • 6 oz salami, diced
  • 8 oz mozzarella cheese, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup olives, sliced (optional)
  • ½ cup Italian dressing
  • salt and pepper to taste
  • fresh basil leaves for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions.
  2. Drain and rinse under cold water.
  3. In a large bowl, combine the tortellini, salami, mozzarella, cherry tomatoes, cucumber, red bell pepper, red onion, and olives.
  4. Drizzle with Italian dressing and season with salt and pepper.
  5. Toss gently to combine.
  6. Garnish with fresh basil leaves if desired.

Notes

  • Serve chilled or at room temperature.
  • This salad can be made ahead of time and stored in the refrigerator.
