Description
Creamy roasted red pepper pasta with garlic and basil.
Ingredients

- 2 tablespoon butter
- 1 cup marinated roasted red peppers, including 1-2 tablespoon marinating liquid
- 3 cloves garlic, crushed/minced
- Salt and fresh ground pepper, to taste
- 1 teaspoon dried basil
- 1 cup heavy cream
- ½ lb pasta
- ½ cup reserved pasta water, as needed
Instructions
- Cook pasta according to package instructions. Reserve ½ cup pasta water.
- In a pan, melt butter over medium heat.
- Add garlic and sauté until fragrant.
- Stir in roasted red peppers and marinating liquid.
- Add heavy cream, basil, salt, and pepper. Simmer for a few minutes.
- Toss in cooked pasta and mix well.
- Add reserved pasta water as needed for consistency.
Notes
- Adjust seasoning to your taste.
- Use more or less cream based on preference.
