Rich Rhubarb & Cream Cheese Dessert Squares are a delightful combination of tart rhubarb and creamy cheese filling, served in a buttery crust.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 3 cups fresh rhubarb, chopped into 1/2-inch pieces
- 1 cup granulated sugar
- 2 teaspoons cornstarch
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add the cold butter and mix until crumbly.
- Press the mixture into the bottom of a greased 9×9 inch baking dish.
- Bake for 15 minutes.
- In another bowl, combine rhubarb, sugar, cornstarch, lemon zest, and vanilla extract.
- Spread the rhubarb mixture over the baked crust.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
- Pour the cream cheese mixture over the rhubarb layer.
- Bake for an additional 25-30 minutes until set.
- Let cool, then cut into squares and serve.
Notes
- Use fresh rhubarb for the best flavor.
- Store leftovers in the refrigerator.
- Can be served warm or chilled.
