Description
A flavorful and rich butter chicken biryani that combines marinated chicken, aromatic spices, and fragrant basmati rice.
Ingredients

- 200 g chicken breast, cut into pieces
- 1/2 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- 1 tsp red chili powder
- Salt, to taste
- 2 cups basmati rice
- 8 cups water
- 1 tbsp oil
- 2 tbsp salt
- 2 tbsp fresh mint leaves
- 2 cloves
- 1/4 cinnamon stick
- 2 cardamom pods
- 1/2 bay leaf
- 1 medium onion
- 2 large tomatoes
- 1 tbsp ginger garlic paste
- 6 cashews
- 2 tbsp unsalted butter
- 1/2 tsp cumin seeds
- 2 cloves
- 1/4 cinnamon stick
- 1 cardamom pod
- 1/2 bay leaf
- 1 tbsp kasuri methi
- 2 tbsp yogurt
- 1/4 cup water (if needed)
- 1 tsp garam masala powder
- 1/4 cup fresh mint leaves and/or cilantro
- 1/3 cup crispy fried onions
Instructions
- Marinate chicken with ginger garlic paste, turmeric, coriander powder, red chili powder, and salt. Let it sit for at least 30 minutes.
- Rinse basmati rice until water runs clear. Soak for 30 minutes.
- In a pot, bring 8 cups of water to a boil. Add oil, salt, mint leaves, cloves, cinnamon, cardamom, and bay leaf.
- Add soaked rice to boiling water. Cook until rice is 70% done. Drain and set aside.
- In a pan, heat butter. Add sliced onion and sauté until golden brown.
- Add tomatoes, ginger garlic paste, cashews, cumin seeds, and spices. Cook until tomatoes are soft.
- Add marinated chicken and cook until it’s fully cooked.
- Mix in kasuri methi, yogurt, and water if needed. Simmer for 10 minutes.
- In a large pot, layer half of the chicken mixture, then half of the rice, then repeat.
- Sprinkle garam masala on top. Cover and cook on low heat for 20 minutes.
- Serve garnished with mint leaves, cilantro, and crispy fried onions.

- Adjust spices to your taste.
