Rich Butter Chicken Biryani

Description

A flavorful and rich butter chicken biryani that combines marinated chicken, aromatic spices, and fragrant basmati rice.


Ingredients

  • 200 g chicken breast, cut into pieces
  • 1/2 tsp ginger garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1 tsp red chili powder
  • Salt, to taste
  • 2 cups basmati rice
  • 8 cups water
  • 1 tbsp oil
  • 2 tbsp salt
  • 2 tbsp fresh mint leaves
  • 2 cloves
  • 1/4 cinnamon stick
  • 2 cardamom pods
  • 1/2 bay leaf
  • 1 medium onion
  • 2 large tomatoes
  • 1 tbsp ginger garlic paste
  • 6 cashews
  • 2 tbsp unsalted butter
  • 1/2 tsp cumin seeds
  • 2 cloves
  • 1/4 cinnamon stick
  • 1 cardamom pod
  • 1/2 bay leaf
  • 1 tbsp kasuri methi
  • 2 tbsp yogurt
  • 1/4 cup water (if needed)
  • 1 tsp garam masala powder
  • 1/4 cup fresh mint leaves and/or cilantro
  • 1/3 cup crispy fried onions

Instructions

  1. Marinate chicken with ginger garlic paste, turmeric, coriander powder, red chili powder, and salt. Let it sit for at least 30 minutes.
  2. Rinse basmati rice until water runs clear. Soak for 30 minutes.
  3. In a pot, bring 8 cups of water to a boil. Add oil, salt, mint leaves, cloves, cinnamon, cardamom, and bay leaf.
  4. Add soaked rice to boiling water. Cook until rice is 70% done. Drain and set aside.
  5. In a pan, heat butter. Add sliced onion and sauté until golden brown.
  6. Add tomatoes, ginger garlic paste, cashews, cumin seeds, and spices. Cook until tomatoes are soft.
  7. Add marinated chicken and cook until it’s fully cooked.
  8. Mix in kasuri methi, yogurt, and water if needed. Simmer for 10 minutes.
  9. In a large pot, layer half of the chicken mixture, then half of the rice, then repeat.
  10. Sprinkle garam masala on top. Cover and cook on low heat for 20 minutes.
  11. Serve garnished with mint leaves, cilantro, and crispy fried onions.
