Ingredients

  • Egg yolks – 3
  • Milk – 1/2 cup
  • Salt – 1/4 teaspoon
  • Egg whites – 3
  • Cream of tartar – 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, margarine, and sugar until crumbly.
  3. Press the mixture into the bottom of a baking dish.
  4. In a separate bowl, combine chopped rhubarb, egg yolks, milk, and salt.
  5. Pour the filling over the crust.
  6. In another bowl, whip egg whites with cream of tartar until stiff peaks form.
  7. Spread meringue over the filling.
  8. Bake for 25-30 minutes or until meringue is golden.
