- Filling:
- 2 cups sugar
- 7 tablespoons all-purpose flour
- 1 cup heavy whipping cream
- 3 large eggs, beaten
- 5 cups finely chopped fresh or frozen rhubarb, thawed and drained
- Topping:
- 6 ounces cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream, whipped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour and sugar. Cut in cold butter until crumbly.
- Press the mixture into the bottom of a greased baking dish.
- Bake for 15 minutes.
- In another bowl, combine sugar, flour, cream, beaten eggs, and rhubarb. Mix well.
- Pour the filling over the baked crust.
- Bake for an additional 30 minutes.
- In a separate bowl, beat cream cheese, sugar, and vanilla until smooth.
- Fold in the whipped cream gently.
- Spread the cream cheese topping over the baked rhubarb bars.
- Chill in the refrigerator for at least 2 hours before serving.
