  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (or more, to taste)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons chopped fresh parsley, for garnish
  • Optional: Cooked pasta (such as penne or rotini) or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned on all sides.
  3. Add onion and garlic to the skillet, cooking until softened.
  4. Stir in pepperoncini peppers, broth, and reserved juice.
  5. Add heavy cream, Italian seasoning, red pepper flakes, salt, and black pepper.
  6. Simmer for 10-15 minutes until chicken is cooked through.
  7. Garnish with fresh parsley before serving.
  8. Serve over pasta or rice if desired.
