- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 1/2 cups diced fresh peaches
- 1/2 cup quick oats
- Optional: a handful of chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced peaches and oats (and nuts if using).
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Feel free to use salted butter if needed.
- Dark brown sugar can be substituted for light brown sugar.
- Experiment with different types of oats for texture.
- Make sure to pat canned peaches dry before adding.
