Description

Ingredients

  • 1 pound dry medium shell pasta
  • 6 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk, room temperature
  • 1 cup heavy cream, room temperature
  • 1¼ teaspoons kosher salt
  • ½ teaspoon dry mustard powder
  • freshly ground black pepper to taste
  • 4 cups freshly shredded Vermont Cheddar cheese

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pot, melt the butter over medium heat.
  3. Add the flour and whisk for 1-2 minutes to create a roux.
  4. Slowly add the milk and heavy cream, whisking constantly until smooth.
  5. Stir in the salt, mustard powder, and pepper.
  6. Cook for about 5 minutes until the mixture thickens.
  7. Add the cheddar cheese and stir until melted and smooth.
  8. Combine the cheese sauce with the cooked pasta and mix well.
  9. Serve hot.

Notes

  • For extra flavor, add cooked bacon or breadcrumbs on top.
  • Store leftovers in an airtight container in the fridge.
  • Reheat in the microwave or on the stovetop with a splash of milk.
