  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry (cut in half lengthwise to make 12 sheets)
  • ¼ cup melted butter or olive oil (for brushing)
  • ¼ cup honey
  • ½ tsp red chili flakes (adjust to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the feta cheese, ricotta cheese, and thyme leaves.
  3. Lay a sheet of phyllo pastry on a flat surface and brush with melted butter or olive oil.
  4. Place a tablespoon of the cheese mixture at one end of the phyllo and roll tightly.
  5. Repeat with remaining sheets and filling.
  6. Place the rolls on a baking sheet lined with parchment paper.
  7. Brush the tops with more melted butter or olive oil.
  8. Bake for 20-25 minutes or until golden brown.
  9. In a small saucepan, combine honey and red chili flakes. Heat until warm.
  10. Drizzle the chili honey over the baked rolls before serving.
