  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup granulated sugar
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter over medium heat.
  3. Whisk in the sugar, flour, cocoa powder, and salt until combined.
  4. Gradually stir in the milk, then add the egg yolks and vanilla extract.
  5. Cook over medium heat, stirring constantly until thickened.
  6. Pour the chocolate filling into the pre-baked pie crust.
  7. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  8. Gradually add the sugar and beat until stiff peaks form.
  9. Spread the meringue over the chocolate filling.
  10. Bake for 10-15 minutes or until the meringue is golden.
