Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 3 cups vegetable or peanut oil (for frying)
  • 1/2 cup cayenne pepper
  • 1/4 cup light brown sugar
  • 2 tablespoons smoked paprika
  • 4 brioche buns
  • Dill pickle chips (for serving)

Instructions

  1. Marinate chicken in buttermilk for at least 1 hour.
  2. Mix flour, cayenne pepper, brown sugar, and smoked paprika in a bowl.
  3. Coat marinated chicken in the flour mixture.
  4. Heat oil in a deep skillet over medium-high heat.
  5. Fry chicken until golden brown and cooked through, about 5-7 minutes per side.
  6. Drain on paper towels.
  7. Assemble sandwiches with fried chicken on brioche buns and add dill pickle chips.
