Description

A flavorful Moroccan Chicken and Rice dish that combines spices, vegetables, and tender chicken.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 cups long-grain rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup carrots, sliced
  • 1 cup bell peppers, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or cilantro for garnish
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Add the chicken thighs and brown on both sides.
  4. Stir in the spices: cumin, coriander, cinnamon, paprika, turmeric, and cayenne.
  5. Add the rice, chicken broth, diced tomatoes, carrots, and bell peppers.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked.
  7. Remove from heat and let sit for 5 minutes before fluffing with a fork.
  8. Garnish with fresh parsley or cilantro and serve with lemon wedges.

  • For added flavor, marinate chicken in spices for a few hours before cooking.
