- 4 boneless, skinless chicken thighs
- 2 cups long-grain rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 cup carrots, sliced
- 1 cup bell peppers, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- ½ teaspoon turmeric
- ¼ teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or cilantro for garnish
- Lemon wedges for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Add the chicken thighs and brown on both sides.
- Stir in the spices: cumin, coriander, cinnamon, paprika, turmeric, and cayenne.
- Add the rice, chicken broth, diced tomatoes, carrots, and bell peppers.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked.
- Remove from heat and let sit for 5 minutes before fluffing with a fork.
- Garnish with fresh parsley or cilantro and serve with lemon wedges.
Notes
- Adjust the spice levels to your preference.
- For added flavor, marinate chicken in spices for a few hours before cooking.
- Serve with a side salad for a complete meal.
