- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped (oil-packed for best flavor)
- 1/4 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil and butter in a skillet over medium heat.
- Season the salmon fillets with salt and pepper.
- Place salmon fillets skin-side down in the skillet and cook for 4-5 minutes on each side until cooked through.
- Remove salmon from the skillet and set aside.
- Add minced garlic to the skillet and sauté until fragrant.
- Add sun-dried tomatoes, chicken broth, and heavy cream to the skillet.
- Stir in Parmesan cheese, dried thyme, and dried basil, and cook until the sauce thickens.
- Return the salmon to the skillet and coat with the sauce.
- Garnish with fresh parsley before serving.
