- 1 tablespoon olive oil
- 1.5 pounds boneless skinless chicken, pounded to even thickness
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 10 ounces penne pasta
- 1 cup sun-dried tomatoes, drained
- 3 tablespoons butter
- 2 cups chicken broth
- 2 teaspoons dried Italian seasoning
- 1 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1 cup heavy cream, room temperature
- 3 tablespoons flour
- 2 teaspoons minced garlic
- Fresh basil, torn (for garnish)
- Additional Parmesan cheese (optional, for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken with salt and pepper, then add to the skillet.
- Cook chicken for 6-7 minutes per side until golden brown and cooked through.
- Remove chicken and set aside. In the same skillet, melt butter.
- Add garlic and cook for 1 minute until fragrant.
- Stir in flour and cook for another minute.
- Gradually whisk in chicken broth and heavy cream.
- Add sun-dried tomatoes, Italian seasoning, paprika, and Parmesan cheese. Stir well.
- Cook until sauce thickens, about 5 minutes.
- Cook penne pasta according to package instructions, then drain.
- Add cooked pasta to the sauce. Stir to combine.
- Slice chicken and place on top of pasta. Garnish with fresh basil and additional Parmesan if desired.
