- 1 pound raw large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh baby spinach
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- ¾ cup heavy cream
- ¼ cup cream cheese, softened
- ⅓ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and cook for 1 minute.
- Add cherry tomatoes, spinach, Italian seasoning, paprika, red pepper flakes, salt, and black pepper. Cook until spinach wilts.
- Remove from heat and stir in the shrimp until well coated.
- In a bowl, mix heavy cream, cream cheese, and Parmesan cheese until smooth.
- Pour the creamy mixture over the shrimp and vegetable mixture.
- Sprinkle mozzarella cheese on top.
- Bake in the oven for 20-25 minutes until shrimp are cooked through and cheese is bubbly.
- Garnish with fresh parsley before serving.
