Description

A flavorful low-carb shrimp dish baked with a creamy Tuscan sauce.


Ingredients

  • 1 pound raw large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh baby spinach
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¾ cup heavy cream
  • ¼ cup cream cheese, softened
  • ⅓ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and cook for 1 minute.
  4. Add cherry tomatoes, spinach, Italian seasoning, paprika, red pepper flakes, salt, and black pepper. Cook until spinach wilts.
  5. Remove from heat and stir in the shrimp until well coated.
  6. In a bowl, mix heavy cream, cream cheese, and Parmesan cheese until smooth.
  7. Pour the creamy mixture over the shrimp and vegetable mixture.
  8. Sprinkle mozzarella cheese on top.
  9. Bake in the oven for 20-25 minutes until shrimp are cooked through and cheese is bubbly.
  10. Garnish with fresh parsley before serving.
