Lemon Oatmeal Crumble Bars are a delightful treat with a tangy lemon filling and a crumbly oat topping.

- 7 tablespoons (99g) unsalted butter, softened to room temperature
- 3/4 cup (150g) light or dark brown sugar, packed
- 1 teaspoon vanilla extract
- 1 cup (125g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (85g) old-fashioned oats or quick oats (not instant)
- 1 can (14 ounces) full-fat sweetened condensed milk
- 6 tablespoons (90ml) lemon juice (from about 2 lemons)
- 1 tablespoon lemon zest (from about 1 lemon)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the softened butter and brown sugar until smooth.
- Add vanilla extract and mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until crumbly.
- Stir in the oats until well combined.
- Press half of the oat mixture into the bottom of a greased baking dish.
- In a separate bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest.
- Pour the lemon filling over the crust in the baking dish.
- Sprinkle the remaining oat mixture on top of the lemon filling.
- Bake for 30-35 minutes or until golden brown.
- Let cool before cutting into bars.
Notes
- Store bars in the refrigerator for up to a week.
- These bars can be frozen for longer storage.
- Use fresh lemons for the best flavor.
