  • 1/2 cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 6 tbsp unsalted butter, room temperature, for the lemon curd
  • 3/4 cup granulated sugar for the lemon curd
  • 3 large eggs for the lemon curd
  • 1/2 cup fresh lemon juice for the lemon curd
  • 1 tbsp lemon zest for the lemon curd
  • 4 large egg whites, room temperature
  • 1/2 cup granulated sugar for the meringue
  • 1/4 tsp cream of tartar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add lemon juice, lemon zest, and sour cream. Mix well.
  6. Add eggs one at a time, mixing after each addition.
  7. Pour the cheesecake filling into the crust and bake for 60 minutes.
  8. While cheesecake is baking, prepare lemon curd. Melt butter in a saucepan.
  9. Whisk together sugar, eggs, lemon juice, and zest in a bowl. Add to melted butter.
  10. Cook over low heat until thickened, stirring constantly.
  11. Pour the lemon curd over the baked cheesecake and let cool.
  12. For the meringue, beat egg whites and cream of tartar until soft peaks form.
  13. Gradually add sugar and beat until stiff peaks form.
  14. Spread meringue over cooled cheesecake and bake at 350°F (177°C) for 10 minutes.
  15. Let it cool and refrigerate for at least 4 hours before serving.
