A refreshing and creamy lemon chia pudding that’s easy to make.
Ingredients

- 1/2 cup chia seeds
- 2 cups almond milk (or milk of your choice)
- 1/4 cup fresh lemon juice
- Zest from 1 lemon
- 2–3 tablespoons maple syrup (or honey, to taste)
- 1/2 teaspoon vanilla extract
- 1/4 cup Greek yogurt or coconut cream (optional for extra creaminess)
Instructions
- In a bowl, combine chia seeds and almond milk.
- Add lemon juice, lemon zest, maple syrup, and vanilla extract. Stir well.
- Let the mixture sit for 10 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours or overnight.
- Before serving, mix in Greek yogurt or coconut cream if desired.
- Serve chilled, topped with fresh fruit or nuts.
Notes
- Adjust sweetness to your taste with more or less maple syrup.
- For a thicker pudding, add more chia seeds.
- This pudding can be made a few days in advance.
