Ingredients

  • 23 tablespoons maple syrup (or honey, to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup Greek yogurt or coconut cream (optional for extra creaminess)

Instructions

  1. In a bowl, combine chia seeds and almond milk.
  2. Add lemon juice, lemon zest, maple syrup, and vanilla extract. Stir well.
  3. Let the mixture sit for 10 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 2 hours or overnight.
  5. Before serving, mix in Greek yogurt or coconut cream if desired.
  6. Serve chilled, topped with fresh fruit or nuts.

Notes

  • Adjust sweetness to your taste with more or less maple syrup.
  • For a thicker pudding, add more chia seeds.
