- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/2 cup grated Romano cheese
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a shallow dish, combine flour, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, place the grated Romano cheese.
- Dredge each chicken breast in the flour mixture, then dip in the eggs, and finally coat with Romano cheese.
- Heat olive oil in a large skillet over medium heat.
- Cook chicken for 4-5 minutes on each side until golden brown.
- Transfer chicken to a baking dish.
- In the same skillet, add lemon juice, chicken broth, and butter. Stir until combined.
- Pour the sauce over the chicken in the baking dish.
- Bake for 20-25 minutes until the chicken is cooked through.
- Garnish with chopped parsley and serve with lemon wedges.
