Keto Crispy Reuben Roll-Ups are a low-carb twist on the classic Reuben sandwich. Enjoy the flavors without the bread.
Ingredients

- 2 cups Shredded Swiss Cheese
- 8 oz Sliced Corned Beef Deli Meat
- 1 cup Sauerkraut
- 1/4 cup Mayonnaise
- 1 tsp Worcestershire Sauce
- 2 tbsp Sugar-Free Ketchup
- 1 tbsp Swerve Confectioner’s Sugar Substitute
- 1 tsp Horseradish Sauce
- 1/2 tsp Paprika
Instructions
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Spread shredded Swiss cheese evenly on the baking sheet.
- Bake for 5-7 minutes or until the cheese is melted and slightly golden.
- Remove from the oven and let cool for a minute.
- Layer corned beef, sauerkraut, and a mixture of mayonnaise, Worcestershire sauce, ketchup, sugar substitute, horseradish, and paprika on the cheese.
- Roll up carefully and secure with toothpicks if needed.
- Return to the oven for another 5 minutes to warm through.
- Serve immediately and enjoy!
Notes
- Feel free to adjust the spice level with more or less horseradish sauce.
- For a different flavor, try adding pickles or mustard.
- These roll-ups can be made ahead and stored in the fridge before baking.
