  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (for garnish)
  • 1/2 cup shredded coconut (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, and salt.
  3. In a large bowl, cream together the butter, vegetable oil, and sugar until light and fluffy.
  4. Beat in the egg yolks, one at a time, mixing well after each addition.
  5. Add the vanilla extract and buttermilk to the mixture, blending thoroughly.
  6. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  7. Fold in the shredded coconut and chopped nuts.
  8. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold into the cake batter.
  9. Pour the batter into greased cake pans and bake for 25-30 minutes.
  10. Allow the cakes to cool completely before frosting.
  11. For the frosting, beat together cream cheese and butter until smooth.
  12. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  13. Frost the cooled cakes and garnish with pecans and coconut.
