Delicious Honey Peach Cream Cheese Cupcakes perfect for summer baking.

- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- ½ cup honey
- ½ cup whole milk
- 1 tsp vanilla extract
- 2 ripe fresh peaches, diced
- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- 1 egg yolk
- 1 tsp vanilla extract (for filling)
- Peach slices, for garnish
- Honey drizzle, for topping
- Crushed graham crackers/streusel topping, for texture
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add eggs, honey, milk, and vanilla extract to the butter mixture, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in diced peaches.
- Scoop batter into cupcake liners, filling each about 2/3 full.
- In a separate bowl, mix cream cheese, sugar, egg yolk, and vanilla for the filling until smooth.
- Add a spoonful of cream cheese filling on top of the cupcake batter in each liner.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool completely before garnishing with peach slices, honey drizzle, and crushed graham crackers.
Notes
- For gluten-free option, substitute all-purpose flour with gluten-free flour.
- Use ripe peaches for best flavor, or canned peaches that are drained and dried.
