Ingredients

  • 2 ripe fresh peaches, diced
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • 1 egg yolk
  • 1 tsp vanilla extract (for filling)
  • Peach slices, for garnish
  • Honey drizzle, for topping
  • Crushed graham crackers/streusel topping, for texture

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs, honey, milk, and vanilla extract to the butter mixture, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in diced peaches.
  7. Scoop batter into cupcake liners, filling each about 2/3 full.
  8. In a separate bowl, mix cream cheese, sugar, egg yolk, and vanilla for the filling until smooth.
  9. Add a spoonful of cream cheese filling on top of the cupcake batter in each liner.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Let cool completely before garnishing with peach slices, honey drizzle, and crushed graham crackers.
