Description
Homemade Jam Donut Focaccia is a sweet and fluffy bread filled with raspberry preserves and topped with a sugary glaze.
Ingredients

- 1 3/4 cups warm water (105-115°F)
- 2 tsp sugar
- 1 packet active dry yeast
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 tsp salt
- 6 tbsp olive oil, divided
- 1 jar raspberry preserves (Bonne Maman or similar)
- 2 cups confectioners’ sugar
- 2–4 tbsp whole milk (or as needed for consistency)
Instructions
- In a bowl, combine warm water and sugar. Add yeast and let it sit until foamy.
- In a large bowl, mix bread flour, all-purpose flour, and salt.
- Add yeast mixture and 4 tbsp olive oil to the flour mixture. Mix until combined.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
- Preheat the oven to 375°F (190°C).
- Punch down the dough and shape it into a rectangle. Place it in a greased baking pan.
- Using your fingers, create dimples in the surface of the dough.
- Fill the dimples with raspberry preserves.
- Drizzle remaining olive oil over the top.
- Bake for 25-30 minutes until golden brown.
- In a bowl, mix confectioners’ sugar and milk until smooth. Drizzle over the warm focaccia.
Notes
- Let the focaccia cool slightly before glazing.
- Store in an airtight container for up to 3 days.
