Description

Homemade Jam Donut Focaccia is a sweet and fluffy bread filled with raspberry preserves and topped with a sugary glaze.


Ingredients

  • 1 3/4 cups warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil, divided
  • 1 jar raspberry preserves (Bonne Maman or similar)
  • 2 cups confectioners’ sugar
  • 24 tbsp whole milk (or as needed for consistency)

Instructions

  1. In a bowl, combine warm water and sugar. Add yeast and let it sit until foamy.
  2. In a large bowl, mix bread flour, all-purpose flour, and salt.
  3. Add yeast mixture and 4 tbsp olive oil to the flour mixture. Mix until combined.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the dough and shape it into a rectangle. Place it in a greased baking pan.
  8. Using your fingers, create dimples in the surface of the dough.
  9. Fill the dimples with raspberry preserves.
  10. Drizzle remaining olive oil over the top.
  11. Bake for 25-30 minutes until golden brown.
  12. In a bowl, mix confectioners’ sugar and milk until smooth. Drizzle over the warm focaccia.

  • Let the focaccia cool slightly before glazing.
