Description

A delicious herb chicken served with creamy mashed potatoes and sweet glazed carrots.


Ingredients

  • 23 pieces boneless, skinless chicken breasts (or thighs)
  • Salt & pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp Dijon mustard (optional)
  • 1 tbsp chopped parsley or chives (for garnish)
  • 1.5 lbs Yukon gold or russet potatoes, peeled and cubed
  • 1/2 cup milk or cream
  • 23 tbsp butter
  • Salt to taste
  • 3 cups baby carrots or sliced carrots
  • 2 tbsp butter
  • 1 tbsp brown sugar or honey
  • 1/4 tsp salt
  • Pinch cinnamon or thyme (optional)

Instructions

  1. Cook the chicken by seasoning with salt, pepper, garlic powder, thyme, and rosemary.
  2. Heat olive oil and butter in a pan over medium heat. Add chicken and cook until browned and cooked through.
  3. Remove chicken and set aside. In the same pan, add minced garlic and sauté.
  4. Add chicken broth, heavy cream, Parmesan cheese, and Dijon mustard. Stir until combined and simmer.
  5. Return chicken to the pan and coat with the herb sauce. Garnish with parsley or chives.
  6. For mashed potatoes, boil cubed potatoes until tender. Drain and return to pot.
  7. Add milk or cream, butter, and salt. Mash until smooth.
  8. For glazed carrots, melt butter in a pan. Add carrots and sauté.
  9. Add brown sugar or honey, salt, and optional cinnamon or thyme. Cook until carrots are tender and glazed.
  10. Serve chicken with mashed potatoes and glazed carrots.

Notes

  • Adjust seasoning to your preference.
  • For a lighter version, use less butter and cream.
  • Parsley or chives add freshness as a garnish.
