Ingredients

  • 1 lb elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper
  • 1/4 cup sweet pickle relish
  • 1/4 cup shredded carrots
  • 1/4 cup finely chopped red bell pepper
  • 2 celery stalks, finely chopped
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente.
  2. Drain and rinse under cold water to cool.
  3. In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, granulated sugar, salt, and black pepper.
  4. Add the cooled macaroni, sweet pickle relish, shredded carrots, red bell pepper, celery, and parsley to the bowl.
  5. Toss everything together until well mixed.
  6. Cover and refrigerate for at least 1 hour before serving.
