  • 1 large avocado, diced
  • 1 cup corn, thawed if frozen
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp lime juice
  • Salt to taste
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tbsp milk, plus more as needed
  • 2 cups cooked rice (jasmine or brown)

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a bowl, combine the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Preheat the grill to medium-high heat.
  4. Grill the shrimp for 2-3 minutes on each side until cooked through.
  5. In a separate bowl, mix avocado, corn, red onion, cilantro, lime juice, and salt for the salsa.
  6. In another bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice, milk, salt, and black pepper for the creamy sauce.
  7. Assemble the bowls by placing rice at the bottom, topping with grilled shrimp, avocado corn salsa, and creamy garlic sauce.
