Ingredients
- Macaroni (8 oz)
- Sweet gherkins (½ cup)
- Red bell pepper (¾ cup)
- Celery (⅓ cup)
- Red onion (⅓ cup)
- Hard-boiled eggs (2 large)
- Mayonnaise (¾ cup)
- Sour cream (¼ cup)
- Sweet pickle juice (2 Tbsp)
- Red wine vinegar (1 Tbsp)
- Sugar (1 Tbsp)
- Dijon mustard (2 tsp)
- Salt & pepper
- Garlic powder
- Crushed red pepper
Instructions
- Cook macaroni to firm al dente. Drain and cool.
- Dice sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
- In a bowl, mix mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, and Dijon mustard.
- Combine the cooked macaroni with the diced ingredients.
- Pour the dressing over the macaroni mixture and stir to combine.
- Season with salt, pepper, garlic powder, and crushed red pepper.
- Chill for at least 30 minutes before serving.
