Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm buttermilk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Vegetable oil, for frying
  • For the glaze: 2 cups powdered sugar
  • 34 tablespoons milk or buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine flour, sugar, and salt.
  2. Dissolve yeast in warm buttermilk.
  3. Add yeast mixture, eggs, butter, and vanilla to dry ingredients.
  4. Knead until smooth. Let rise for 1 hour.
  5. Roll out dough to 1/2 inch thick and cut into squares.
  6. Heat oil in a deep fryer or pot.
  7. Fry squares until golden brown on both sides.
  8. Remove and drain on paper towels.
  9. Mix powdered sugar, milk, and vanilla for glaze.
  10. Dunk warm beignets in glaze.
