Delicious glazed buttermilk beignet squares, perfect for breakfast or dessert.
Ingredients

- 3 ½ cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1 cup warm buttermilk
- 2 large eggs
- 4 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Vegetable oil, for frying
- For the glaze: 2 cups powdered sugar
- 3–4 tablespoons milk or buttermilk
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine flour, sugar, and salt.
- Dissolve yeast in warm buttermilk.
- Add yeast mixture, eggs, butter, and vanilla to dry ingredients.
- Knead until smooth. Let rise for 1 hour.
- Roll out dough to 1/2 inch thick and cut into squares.
- Heat oil in a deep fryer or pot.
- Fry squares until golden brown on both sides.
- Remove and drain on paper towels.
- Mix powdered sugar, milk, and vanilla for glaze.
- Dunk warm beignets in glaze.
Notes
- Serve fresh for the best taste.
- Store leftovers in an airtight container.
- Adjust glaze thickness with more or less milk.
