This Edamame Salad with Cilantro Lime Dressing is fresh and nutritious.


Ingredients

  • 2 cups shelled edamame
  • 2 cups frozen organic corn
  • 1 red bell pepper, diced
  • 1/2 cup finely chopped red onion
  • 1/3 cup chopped green onion
  • Cilantro for garnish
  • For the dressing:
  • 2 tablespoons lime juice
  • 2 tablespoons avocado oil
  • 1 tablespoon red apple vinegar
  • 1 tablespoon honey (or agave)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine edamame, corn, red bell pepper, red onion, and green onion.
  2. In a small bowl, whisk together lime juice, avocado oil, red apple vinegar, honey, sea salt, and black pepper.
  3. Pour the dressing over the salad and toss well to combine.
  4. Garnish with cilantro before serving.
