A simple and delicious macaroni pasta salad that is perfect for gatherings.
Ingredients

- 8 oz large macaroni elbow pasta
- 2/3 cup mayonnaise
- 1/3 cup milk
- 2 tablespoons lemon juice
- 1 stalk of celery, finely chopped
- 1/2 small red onion, finely chopped
- 1 large carrot, finely chopped
- 1/4 cup chopped fresh Italian parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 teaspoons sugar
- 1 teaspoon dried dill
Instructions
- Cook macaroni according to package instructions. Drain and cool.
- In a large bowl, combine mayonnaise, milk, and lemon juice.
- Add celery, red onion, carrot, and parsley to the bowl.
- Mix in the cooled macaroni.
- Add salt, black pepper, sugar, and dill. Stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust seasoning to taste.
- You can add other vegetables if desired.
- This salad keeps well for a few days in the fridge.
